Project Description
The story of lambic in the Belgian culture is a complex history that dates back to the times of the Roman Empire. From conquest and conquer in ancient times, to World Wars, taxation, decline in popularity, and resurgence, lambic has continued to persevere and evolve.
Defined by Jan IV, count of Flanders in 1420, the use of 30% of wheat was from 1965 registered with other standards as plato grade and brewing place in the Belgian Royal Decree. Lambic may only be brewed in Brussels on its west side called Zenne Valley & Pajotteland and its flavor is acquired through the wheat and barley in the brewing process as well as the micro-organisms (including Brettanomyces lambicus and Brettanomyces bruxellensis) present in the air of the Zenne valley which allow spontaneous fermentation.
Lambic is brewed when the nights are cold – from October to May. Approximately 300 Lambic breweries existed around 1900. Now, only about 10 traditional Lambic breweries are left.
TIMMERMANS BREWERY
Timmermans has kept the tradition of the true lambic alive for over 300 years now. This unique beer, made with 30% wheat, is brewed in Itterbeek (Belgium), in the world’s oldest lambic brewery. At its origin is a miracle: micro-organisms in the air of the Senne valley end up in the wort and cause spontaneous fermentation. This is why a true lambic is brewed only within a 15 km radius of Brussels, in the area known as Pajottenland. The lambic age for 1 to 3 years in wood barrels to be then blended with other lambics or fruits.

Authentic raspberry lambic. A nice balance between the fruity notes of the raspberries and the subtle acidity of a young lambic of the world’s oldest lambic brewery.
After one year of maturation of the lambic in oak barrels, 100% natural raspberry juice is added to lambic. The beer turns a delicate pink shade that is sure to delight you.

Authentic cherry lambic. A nice balance between the fruity notes of the cherries and the subtle acidity of a young lambic of the world’s oldest lambic brewery. After one year of maturation of the lambic in oak barrels, 100% natural cherry juice is added to lambic beer.
The beer turns a delicate red shade that is sure to delight you.

Faro
Faro is one of the most historical beer of Belgium and is obtained by adding sugar-candy to Lambic beer. The sweetness of the candy sugar and the acidity of the lambic is very nice balanced.
Its scent is sweet and light, hinting at a slight expression of Lambic. It has a clear golden-amber colour topped by a dense and creamy foam.

Lambicus Blanche
The White Lambicus is unique. It is a blend of Lambic and malted wheat beer, to which spices such as coriander and dried orange peels are added. Its scent is reminiscent of freshly cut wheat, enhanced by spicy notes.
Its slight acidity balances perfectly with its fruity notes. It’s a refreshing beer.
